During the summer, it can feel like it’s too hot most days for a bowl of soup. But once the leaves start changing color and the cooler weather arrives, it’s time. Make this fall soup and change things up for your next mealtime.

Taco Soup

Taco Tuesdays get a fall makeover by bringing taco flavors into the comfort of the soup bowl. First, cook beef or chicken together with onions. Then, add garlic and jalapeños if you like a little heat. Finally, add the rest of your ingredients, including tomatoes, a packet of taco seasoning, and chicken broth. You may also like corn, green chilis, and beans. And in 20 minutes, you can dish out your soup and garnish it with sour cream and cilantro for a taco soup feast.

Slow Cooker Chili

When you want a hearty chili but don’t have much time, your crock pot can do the heavy lifting. To increase the flavor, sauté your onion and bell pepper ahead of time before tossing them into the slow cooker. In addition, browning the beef with minced garlic can also make the chili more flavorful. Then, add these ingredients plus beans, seasoning, broth, and chipotle in adobo sauce to the crock pot. Cook everything on high for four hours or on low for six.

Chicken and Corn Chowder

Sometimes, a simple soup isn’t enough to warm you up on a cool autumn day. This chowder recipe begins with frying up crisp bacon. Then, save and use that bacon grease to sauté bell pepper, onion, and celery. Next, add garlic and cook for about 30 seconds, then sprinkle flour over the veggies and stir constantly for one minute. Add broth, potatoes, and salt and pepper to this mixture and cook until the potatoes are done. Finally, add chicken, corn kernels, and cream and simmer for another 15 minutes until the chowder thickens. Finish each bowl with a bit of crumbled bacon and chopped green onions.

Broccoli Cheese Soup

Easy to make and full of cheesy goodness, broccoli cheese soup will become a favorite. First, melt a whole stick of butter in a pot and sauté onions for several minutes. Then, sprinkle some flour over them and stir for a minute while it cooks. Next, add milk, half and half, and a sprinkle of nutmeg. In addition, you’ll add broccoli and salt and pepper. Now, simmer that mixture for 30 minutes before adding your favorite shredded cheese. To finish the soup, you can use a potato masher to mash the broccoli or transfer the soup and puree it in a blender. Or, just leave it as-is and dig in!

Fall is a wonderful time to flex your soup and chili-making muscles in the kitchen. Craft a warm bowl of delicious soup and enjoy the changing season from the comfort of your home.
