Weekends are for sleeping in, then waking up and enjoying a delicious brunch. This blueberry croissant breakfast bake is wonderful for a Sunday morning brunch. Grab some orange juice, whipped cream, and coffee to enjoy alongside this scrumptious breakfast recipe.

Blueberry Croissant Breakfast Bake Ingredients

  • 6 large croissants, cut into small pieces
  • 2 cups of fresh blueberries
  • 1 8-ounce package of cream cheese, softened
  • 2/3 cup of sugar
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • 3/4 cup of whole milk
  • powdered sugar
  • whipped cream
  • additional blueberries, for garnish

Blueberry Croissant Breakfast Bake Instructions

For the best results, you should prepare this croissant bake the night before and bake it in the morning.

  1. First, use butter or non-stick cooking spray to coat a 9 x 13-inch baking dish.
  2. Next, use half of the croissant pieces to create a single layer on the bottom of the baking dish.
  3. Once you’ve created a layer of croissant pieces, smoother it with half of the blueberries.
  4. Repeat the process to create a second layer of croissant pieces and blueberries on top of the first layer.
  5. After you’ve created two layers of croissants and blueberries, beat the cream cheese in a large bowl until it is smooth.
  6. Next, add sugar, vanilla, eggs, and milk, then beat until the mixture is fully combined and smooth.
  7. Pour the mixture evenly over the top of the croissant bake.
  8. Cover your croissant bake and refrigerate it overnight. If you don’t have time to prep it ahead, refrigerate your croissant bake for at least 30 minutes.
  9. In the morning, preheat your oven to 350 degrees.
  10. Bake your casserole for 35-45 minutes or until the edges are golden brown and it is set in the middle.
  11. Sprinkle  your croissant bake with powdered sugar, then top it with whipped cream and fresh berries, if desired.
  12. Serve warm and enjoy!

Other Topping Ideas

If you’re not a fan of blueberries you can use other fillings or toppings. Trade blueberries for blackberries or strawberries, or make a berry medley using all three.
